Mini Carob Banana Cupcakes with Cinnamon Frosting

makes 48+ mini cupcakes

Ingredients:
wet-
2 cups of water
2 ripe bananas
1/8 tsp vanilla extract
1/4 to 1/3 cup unsweetened organic applesauce
2 tbs maple syrup

dry-
3 cups whole wheat flour
2 tsp organic baking powder
1/2 cup carob powder

(for cinnamon frosting):
3 oz. vegan cream cheese
1 1/2 tsp cinnamon
1/4 tsp vanilla extract
1/4 tsp maple syrup

Directions:
1. Preheat your oven to 350. Prepare a mini muffin pan with muffin/cupcake liners.

2. Using a stand mixer or hand mixer mix together all the wet ingredients. Slowly add the flour, baking powder, and carob powder. Mix together until thoroughly combined.

3. Place in the oven and bake for 12-15 minutes.

4. Meanwhile whisk together the icing ingredients and place in the fridge until the cupcakes are done baking and cooled.

5. Remove the cupcakes from the oven and cool for a few minutes before removing each cupcakes and place on a cooling.

6. When fully cooled, ice and enjoy with your special pup(s)!20140121-204152.jpg
