Chocolate Peanut Butter Baked Oatmeal

Serves 2

Ingredients:
1 cup rolled oats
1 large banana, mashed
1/2 tsp vanilla extract
1 cup almond milk
3-8 drops liquid stevia (depending on how sweet you want it…I like sweet…)
1/8 tsp sea salt
2 Tbs cocoa powder
2 Tbs all natural creamy peanut butter

Directions:
1. Preheat your oven to 350 degrees. Prepare two small (1-2 cup size) ramekins by lightly oiling each one.

2. Whisk together all of the ingredients above until thoroughly mixed (make sure the cocoa powder is mixed in nicely). Pour equal amounts of oatmeal batter into each ramekin.

3. Bake for 10 minutes, then stir the contents in each ramekin. Bake for another 10-15 minutes, checking on them periodically so they don’t burn. The middle won’t fully cook like the edges but that’s okay! Remove each ramekin from the oven and let cool for 5 minutes. Serve in the ramekins and top with cacao nibs, chocolate chips, or extra peanut butter!
