Oatmeal raisin cookie. My new obsession. And to be honest, I am not a huge fan of just regular oatmeal raisin cookies. They’ve never been in my top favorite cookies. But transformed into something new, I am all about the oatmeal raisin! I created the Oatmeal Raisin Smoothie, so overnight oats was the perfect next edition.
This week has been all about the overnight oats for us here in the DiPaola household. I’ve tried several different recipes that I still need to post. But this one has to be my favorite.
Oatmeal Raisin Cookie Overnight Oats

1 medium banana, mashed
1 cup rolled oats, half blended into flour
3/4 cup water or almond milk
4 Tbs peanut butter, other nut butter, or 4 Tbs PB2
2 Tbs raisins
1/2 tsp cinnamon
1 Tbs maple syrup or a few drops of stevia
Dash of nutmeg
1 tsp vanilla extract
Punch of salt
Add ins: (optional)
1. Combine all ingredients in a mason jar and shake/stir well. Place in the refrigerator overnight and then in the morning, eat up! It’ll be like eating an oatmeal raisin cookie for breakfast…except better.
