As most of my readers know, we have vegan dogs. My goal is to come up with more amazing doggy recipes that are healthy for your and my pups. Recently, we did the Peanut Butter & Banana Overnight Oats, which was a HUGE hit in the DiPaola household with our four-legged friends (and there is even a “human” version…yum)!
Over the weekends is typically when we do a lot more exciting breakfasts, like pancakes and muffins (we do waffles during the week…a lot). I love making new pancake recipes! But today, I woke up at 6:30am and decided to let my hubby sleep and surprise him with breakfast in bed (aw, so cute, right?). We had an event planned at the Wilmington Yoga Center for Project HEAL, so I knew it would be an early morning anyways…even though the event wasn’t until 9:45am…hmm there must be something wrong with my logic.
So first thing I had to do was feed the dogs…and I was feeling optimistic so pancakes for the dogs sounded fun! All the pups LOVE banana and peanut butter. I’ve been feeding them banana and peanut butter for years. So…Peanut Butter Banana Pancakes it was.
**Side note: Bentley has a very sensitive stomach, and he is allergic to chicken plus he has skin allergies. Since he has been on the vegan diet we have had no puking episodes, no diarrhea, and no upset stomach! Plus, ALL of the dogs LOVE LOVE LOVE their food now!
Anyways, I’ve been wanting to incorporate more protein in their diets, since dogs needs a lot of protein to stay healthy. I decided to add lentils to these pancakes to add more nutrition, all while making them a tasty morning treat. All in all, they loved the pancakes, and I tried one myself. I have to say, they weren’t bad! Considering there was not salt or sweeteners of any kind. The banana helps sweeten them up.
Makes 11 pancakes (serving will depend on dog size and feeding schedule)
//for the pancakes//
2 flax eggs (2 Tbs flax + 4 Tbs water)
1/2 cup water
1/2 Tbs coconut oil
1 banana, mashed
1 Tbs peanut butter
3/4 cup oat flour
1/2 cup lentils, cooked
//for the peanut butter sauce//
1 Tbs peanut butter
1/2 tsp coconut oil
1 tsp VegeDog supplement
1. Heat a skillet to medium heat. Whisk together all of your “pancake” ingredients. Cook each pancake until thoroughly cooked through. Set aside.
2. Warm the peanut butter and coconut oil until melted (about 30 seconds). Mix in the VegeDog supplement.
3. Place your doggy pancakes on a plate and drizzle with peanut butter sauce. Serve with fresh apples, blueberries or strawberries. Your dogs will LOVE you!
