Healthy Carrot Cake Smoothie

Colin and I are leaving for Colorado in three days! Just for vacation, but we are so excited. Our families live there, and it’s been over two years since we’ve been back. Originally, my family was moving, and I wanted to see the house that my parents built and where we grew up one last time. But some things changed and it looks like they won’t be moving for a while…

However, that is not changing our plans. This is Colin’s and my first time riding an airplane together! It’s been over 5 years that we’ve been together and all of our traveling has been by car. So this is really exciting! We are going to see where we were married, go to our favorite restaurants (which will be my first time since I recovered from my eating disorder…talk about some amazing new memories we are going to make), and see family and friends.

As I have been packing, cleaning, and organizing (who wants to come home to a messy house!), I couldn’t help but want to give my readers something amazing before I go.

Carrot Cake has always been one of my favorite foods. I probably get that from my mom. Every year she gets a carrot cake for her birthday, and it’s something I always enjoyed.

Sad thing is, we don’t have carrot cake lying around our apartment all the time (cause most people do, right). And it takes FOREVER a good hour or two to make carrot cake.

So, I thought what’s a quick, easy and healthy way to make carrot cake? …there isn’t one! Which is why I decided a carrot cake smoothie will suffice, and boy does this smoothie SUFFICE! All the carrot cake flavors packed into a nutritious, healthy and delicious smoothie. You can’t beat that.

Healthy Carrot Cake Smoothie

Serves 1

//Ingredients//
2 dates
2 Tbs rolled oats
1 banana, peeled, chopped and frozen
1 large carrot, peeled
1/2 cup frozen zucchini
1 tsp salt
1 cup almond milk
1 tsp cinnamon
Pinch of ground nutmeg

//Directions//
1. Place the dates and oats in your blender and blend until you have a fine doughy consistency. Add the rest of the ingredients to your blender and blend on high until smooth. Drink up!

    Oh! Really going to try this!
    Do you grate the carrot first? Or is it no problem for the blender to process it when you put it in as chuncks?

      Depends on your blender! I use a vitamix and a nutribullet. Both are able to easily handle a whole carrot! But if your unsure it wouldn’t be a bad idea to chop the carrot.
