Aside from my love of peanut butter, chocolate and s’mores, I really enjoy strawberry banana. I don’t know what it is about this oatmeal but the creaminess and fluffiness and goodness keeps me wanting more. I also really like SWEET, so if you aren’t a huge fan of sweet you might want to use a smaller amount of agave or liquid stevia. Seriously though, give this recipe a try! You won’t regret it :).
2 small bananas, mashed
1 cup almond milk or water
2 tsp vanilla extract or 1 tsp vanilla powder
1 cup rolled oats
1/8 tsp pinch of salt
1/2 tsp baking powder
1-2 Tbs agave nectar or 8-10 drops liquid stevia
8 strawberries, chopped (leave 2 to slice and place on top)
1 Tbs shredded coconut, optional
1. Preheat your oven to 350 degrees. Lightly oil two single-serve ramekins.
2. Mix all ingredients in a bowl. Evenly pour the oat mixture into the ramekins and top with strawberries and coconut. Bake for 20 minutes. Cool for 2-3 minutes before serving. Enjoy!
