The new thing…SIAB (Smoothie In A Bowl)!
I’ve been trying to think of new ways to have smoothies, other than the traditional in a cup with a straw. Or the mouth-to-cup gulp (then brain freeze).
A couple criteria I have when selecting/making a smoothie is
1. creaminess, and
I love creamy smoothies, which is why my Lemon Cheesecake Smoothie is definitely one of my favorites. Who likes a chunky smoothie?
Number 2. Thickness. My smoothie obsession started back when Colin and I first met almost 6 years ago. We went to a place called Keva Juice everyday. And every time we went, I always asked for my smoothie, EXTRA thick. I used to LOVE extremely thick smoothies! Smoothies that I could eat with a spoon or a folded up straw. Now-a-days, I prefer less thick and more creamy.
BUT thick smoothies makes for the perfect SIAB!
Now, let’s get into how amazing this recipe is. I haven’t met anyone who doesn’t love to eat batter. Cake batter. Dessert bread batter. Cookie dough batter. Cupcake batter. It’s all SO good! (And perk to being vegan, no risk from sickness that can come from eating raw eggs!)
The Banana Bread Dough Bowl is like eating banana bread batter, except a way healthier version. And it tastes true to its counterpart. TRY IT!
Banana Bread Dough Bowl (make the night before you want to eat it!)

1 cup rolled oats
1-2 Tbs chia seeds
1 cup almond milk
1 large or 2 small banana(s), peeled and frozen
1-2 tsp cinnamon
2 tsp vanilla
1/8 tsp sea salt
1 Tbs raisins
1 Tbs chopped walnuts + more for topping
shredded coconut (optional), topping
1. Place oats and chia seeds in a blender and blend until you have a flour-like consistency. Add the almond milk, banana, cinnamon, vanilla, and sea salt and blend until smooth. Place in the fridge overnight.
2. In the morning stir in the raisins and walnuts. Place into two bowls and top with coconut and extra walnuts. YUM!
