No joke Pumpkin Pie Waffles with Cashew Maple Cream

I love breakfast! I believe this is not only one of the most crucial meals of the day, but it is also one of my favorites…aside from lunch, and dinner, and snacks. I guess I just love meal times lol. Not a bad thing to love, right?

Colin has been crazy obsessed really enjoying our Fluffy Vegan Waffle recipe lately, so much that we haven’t tried many other waffle recipes in a few weeks. So I put my foot down this weekend and said, “Colin’s, it’s time to mix it up. We are having Pumpkin Pie Waffles (likes it’s a chore or something).” He stubbornly agreed, of course.

These waffles are mouth-watering good. When I eat them I feel like I am eating Thanksgiving dessert. YUM! These waffles are healthy and packed with nutritionally dense ingredients. They are fluffy and creamy on the inside, just like when you dig into a piece of pumpkin pie. Try them, then you’ll see what I am talking about.

Single Bowl Pumpkin Pie Waffles
makes about 4-5 square Belgium waffles

Ingredients:
1 cup almond milk
1 cup pumpkin puree
1/4 cup maple syrup or agave nectar
3 Tbs coconut oil, melted
1 tsp vanilla
1 1/2 cups whole wheat pastry flour
1/4 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/8 tsp ground cloves
1 1/2 tsp baking powder
1/4 tsp baking soda

Directions:
1. Whisk together the almond milk, pumpkin puree, maple syrup, coconut oil, and vanilla. Add in the flour, salt, cinnamon, ginger, nutmeg, cloves, baking powder, and baking soda. Mix together until just combined.

2. Pour the batter into your waffle maker and cook until done (they will be slightly dough on the inside, just like pumpkin pie!). Serve and top with mounds a dollop of cashew cream. YUM!!

Ingredients:
1 cup cashews, soaked overnight then rinsed and drained
1/4 cup water
1/4 cup maple syrup
1 tsp vanilla
1/4 tsp cinnamon
1/8 tsp ground nutmeg
Pinch of salt

Directions:
1. Place all ingredients in your blender and blend until creamy and smooth. It is no joke the best whip cream you will ever have! You can save whatever you don’t eat  and out in the refrigerator for about a week. It goes great over Pumpkin Pie Baked Oatmeal and Strawberry Coconut Banana Bread, or with fruit, pretzels, and animal crackers. Or simply but grabbing and spoon and eating by the spoonful. YUM!
