If I could live off of smoothies, I totally would. I mean, I probably could but I know with recovering from an eating disorder I need a variety of foods and only having smoothies could be detrimental to my recovery. But still, I love love love my smoothies! I love them so much that I have at least one a day, sometimes two.
I have to say one of my all time favorite smoothie is the Chocolate Cake Batter Smoothie from Oh She Glows, except with my own interpretations of course. I also love my version of the Banana Bread Smoothie (soooo good!!). Check out my version of this delicious chocolate smoothie!
1 cup homemade almond milk (plus some for a thinner smoothie)
1/3 cups rolled oats
1 tsp cinnamon
1 tsp vanilla
1/2 Tbs carob powder
1 Tbs cacao powder
Few drops of liquid stevia
A big handful of spinach
1 medium frozen banana
1 Tbs nut butter (I like homemade almond or mixed nut butter but any would work!)
3-5 ice cubes
Cacao nibs (optional)
You have two options: soak the ingredients to soften the oats, or you can blend it all now, yes right now. However!!! Not all blenders will blend it smoothly without soaking first.
1. In a small bowl, whisk together all ingredients except for the spinach, banana, nut butter and ice cubes. Cover and place in the fridge for at least an hour (if doing it as a morning smoothie overnight works best!).
2. When it’s done soaking, add all the contents of the bowl and the rest of the ingredients to your blender and blend until smooth and creamy.
3. Top with cacao nibs and serve immediately!
